Chicken Tortilla

Preparation: 5 minutes

Ingredients:
  • 8 flour tortillas
  • 2 skinless chicken breast fillets, sliced
  • 2 tablespoon olive oil
  • 1 onion
  • 1 red pepper
  • 2 tomatoes, peeled and diced
  • 2 tablespoon sour cream
  • 1 teaspoon cumin powder
  • 1 teaspoon ground coriander
  • Few drops hot sauce
  • 3.5 oz cheddar cheese, shredded
  • Salt and pepper
 
Warm the tortillas in the oven, at 300 Fahrenheit.
Heat the oil in a skillet. Add the chicken and cook for 5 minutes on high heat. Stir frequently with a wooden spoon.
Meanwhile, peel and mince the onion and cut the red pepper in stripes.
Add the minced onion, red pepper, tomatoes, sour cream and spices to the chicken. Stir well, add salt and pepper, and cook for 5 more minutes.
Pour 2 large spoon of the chicken preparation in the center of each tortilla. Sprinkle cheese on top.
Roll the tortillas over themselves and serve immediately.
