Cod Fish with Curry and Coconut Milk

Preparation: 3 minutes

Servings: 4
 
Ingredients:
1 tablespoon flour
1 tablespoon curcuma
1.5 lbs cod fish
2 shallots
2 tablespoon olive oil
1 tablespoon curry powder
4 tablespoon tomato sauce
1 ¼ cup unsweetened coconut milk
1 tablespoon cilantro, minced
Salt and pepper
 
  • In a large bowl, combine flour with curcuma.
  • Dip the cod fish and in the four mixture. Keep them aside in the fridge.
  • Peel and mince the shallots.
  • Heat the oil in a skillet. Cook the shallots for 2 minutes.
  • Add curry powder, tomato sauce and coconut milk. Stir well. Add salt and pepper and cook for 4 minutes.
  • Add the cod fish in the skillet and cover. Cook for 5 minutes.
  • Transfer the fish in a shallow serving plate and cover with the sauce. Sprinkle cilantro on top.
  • Serve immediately.
