Guacamole (low carb)

Ingredients:
1 small red onion
3 avocadoes, pitted and peeled
1 tomato, peeled and seeded
Juice of 1 lime
2 tablespoons fresh cilantro, minced
Salt and Pepper
 
  • Peel and chop the onion.
  • Transfer the onion into a blender or food processor. Process for a few seconds, then add the avocado, tomato and lime juice. Puree mixture until smooth.
  • Transfer to a serving bowl.
  • Add the cilantro, salt and pepper. Gently stir to combine.
  • Refrigerate the guacamole until ready to serve.
