Eggplant Caviar (low carb)

Preparation: 4 minutes
Cooking time: 10 minutes
Servings: 4
 
Ingredients:
2 small eggplants
2 garlic cloves
2 tablespoons lemon juice
2 tablespoons olive oil
3 tablespoons tahini (sesame paste)
1 tablespoon fresh minced cilantro
Salt and Pepper
 
  • Peel the eggplants. Put them in a pot and add 1 glass of water. Cook for 10 minutes.
  • Peel the garlic.
  • Place the eggplant, coarsely chopped, into a blender or food processor. Add the garlic, lemon juice, olive oil and tahini. Blend mixture until smooth.
  • Add salt and pepper to taste. Sprinkle the cilantro on top of the mixture.
  • Keep the dish chilled in the refrigerator until ready to serve.
