Tzatziki (low carb)

Ingredients:
1 cucumber
2 garlic cloves
10-ounces Greek yogurt
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 teaspoon sweet paprika
2 tablespoons fresh minced tarragon
Salt and pepper
 
  • Peel and shred the cucumber. Place the cucumber in a kitchen towel and press it over a sink to extract excess water.
  • Put the cucumber in a serving bowl.
  • Peel the garlic and press it.
  • Add the yogurt, pressed garlic, olive oil, vinegar, paprika, 1 tablespoon minced tarragon, salt and pepper in the serving bowl. Toss until well coated.
  • Sprinkle the remaining tarragon on top and keep the salad in the refrigerator until ready to serve.
