Tuna Salad (low fat, low carb)

Ingredients:
4 oz solid white tuna in water
1 tablespoon fat-free or light mayonnaise
1 small red onion
½ cup tomatoes
½ cup cucumbers
½ apple, yellow or green variety
1 tablespoon chopped green chilies
2 rice cakes
Salt and pepper
 
  • Drain the tuna. In a bowl, mix the tuna with mayonnaise.
  • Dice onion, tomatoes, cucumber and apples. Transfer them to the tuna mixture.
  • Cut green chilies into thin pieces and add them to the tuna preparation.
  • Add salt and pepper to taste.
  • Spread tuna mixture over rice cakes.
  • Serve immediately.
