Tomato and avocado salad (low carb)

Ingredients:
4 medium tomatoes, coarsely chopped
2 avocadoes, pitted and coarsely chopped
1 medium red onion, minced
2 tablespoons olive oil
2 tablespoons fresh chopped parsley
Salt and pepper to taste
 
  • In a large bowl, combine the onion, tomatoes and avocadoes.
  • Add the olive oil, salt and pepper.
  • Toss until well coated.
  • Sprinkle the parsley on top of the salad.
  • Serve immediately.
