Super Power Salad

Preparation: 12 minutes
Cooking time: 3 minutes

Ingredients:
3 cups mixed spring salad
2 medium tomatoes, diced
1 red medium onion, sliced
1 red, yellow or green bell pepper, diced
1 cup bean sprouts (optional)
¼ cup uncooked couscous
¼ cup dried raisins
¼ cup chopped macadamia nuts, walnuts or almonds
2 tablespoons olive oil
2 tablespoons balsamic vinegar
Fresh chopped parsley (optional)
Salt and pepper
 
  • Cook the couscous according to the package instructions.
  • Meanwhile, pour the olive oil and balsamic vinegar in a serving bowl. Add salt and pepper.
  • Combine all the chopped vegetables along with the dried raisins and nuts in the serving bowl.
  • Add the cooked couscous to the preparation.
  • Mix everything together.
  • Sprinkle parsley on top of the salad.
