Chicken Tortilla Soup

In 15 minutes, serve up a tasty tortilla chicken soup that's healthy, fresh and something the family will love.

Ingredients:
1 teaspoon canola oil
1 onion, chopped
1 green bell pepper, seeded and chopped
1 garlic clove, minced
3 cups reduced-sodium chicken broth
1 (14 ½ ounce) can diced tomatoes
1 (10-ounce) package frozen corn kernels, thawed
1 teaspoon chili seasoning mix
1½ cups chopped cooked chicken breast
¼ cup coarsely chopped fresh cilantro
8 large baked tortilla chips, coarsely broken up
  • Heat the oil in a large nonstick saucepan over medium-high heat. Add the onion, bell pepper and garlic. Cook and stir frequently, until softened and lightly browned, about 5 minutes.
  • Add the broth, tomatoes, corn and chili seasoning mix; bring to a boil over high heat. Add the chicken and cilantro.
  • Reduce the heat and simmer until heated through, about 2 minutes.
  • Serve with the tortilla chips.
