Simple Pancakes

Makes 6 pancakes

 

Ingredients

1  cup all- purpose flour
1  cup whole milk
1  tablespoon sugar
2  tablespoons melted butter
1  teaspoon baking powder
1  teaspoon vanilla extract
1  egg, beaten
    a pinch of salt

Method

   1. Combine all dry ingredients in a large bowl. Make a well in the centre and pour in the wet ingredients. Beat with a whisk until smooth.

   2. Heat pancake pan (a non-stick heavy bottomed seasoned skillet works best) to 375 degrees Fahrenheit.  Use a ¼ measuring cup as a scoop to pour batter onto the hot pan.  Pancakes should be golden brown on both sides. Serve warm with syrup and ice-cream.
